Vegan Ham & Cheese Quinoa Cups
- 2 cups cooked quinoa, in vegetable broth (3/4 cup uncooked)
- 1/2 cup GO Veggie! Dairy Free Mozzarella Style Shreds
- 1/2 cup GO Veggie! Dairy Free Mexican Style Shreds
- 1/2 cup vegan ham, diced
- 1/4 cup parsley, chopped
- 2 tbsp. Galaxy Nutritional Foods' Vegan Gated Parmesan Flavor Topping
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
Preheat oven to 350°F.
Combine all ingredients in a large bowl.
Spray a muffin tin with nonstick spray and spoon mixture to the top of each cup.
Bake for 15 to 20 minutes, until the edges are golden brown and cheese is melted. (Note: Do not under bake or they will not come out of the pan!)
Allow quinoa cups to cool in the tin for at least 5 minutes before serving.
