Strawberry Shortcake Parfait
- 1 8 oz. container GO Veggie! Dairy Free Cream Cheese, Strawberry (softened)
- 4 Tbsp. sugar, divided
- 1 1/4 cup vanilla yogurt
- 3 1/2 cups fresh strawberries, stems removed and quartered
- 1 1/2 cups crushed sugar cookies
- 1/4 cup slivered almonds
- 1/4 cup coconut flakes
Combine cream cheese and 2 Tbsp. sugar using an electric mixer for 2 minutes or until mixture is creamy.
Add vanilla yogurt; continue to mix until well combined.
Place strawberries in a large mixing bowl. Add 2 Tbsp. sugar; gently toss to combine. Set in the fridge for 5 minutes.
Prepare 6 parfait glasses; layer each with the cream cheese mixture, strawberries and crushed cookies.
Repeat until each glass is filled.
Place in the fridge for 1 hour or until ready to serve.
Sprinkle with almonds and coconut; serve chilled.
