Strawberry Cream Cheese Mousse with Graham Cracker Crumbles

Ingredients

  • 2 containers GO Veggie! Dairy Free Strawberry Cream Cheese
  • ½ container organic silken tofu (14 oz)
  • 2 tablespoons maple syrup
  • ¼ cup organic evaporated cane sugar
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt
  • 2 teaspoons vanilla extract
  • 4-6 strawberries, small dice
  • 2-4 vegan graham crackers or vegan vanilla cookies, crumbled

Instructions

In a food processor or blender add GO Veggie! Strawberry Cream Cheese and silken tofu.

Pulse 7-10 times to combine.

Add maple syrup, sugar, lemon juice, sea salt and vanilla extract and blend until mixture is creamy and uniform.

Refrigerate for 1 hour to overnight to develop flavors.

When serving, fold in diced strawberries and top with crumbled graham crackers or cookies.
