Ingredients

For the French Toast:

3 large eggs

1 cup unsweetened coconut milk

2 tablespoons GO VEGGIE classic plain cream cheese

1 tablespoon sugar

1 teaspoon rum extract

1 pinch salt

10 slices white wheat bread

1/4 cup raisins

For the Filling:

1/4 cup GO VEGGIE classic plain cream cheese

1 tablespoon sugar

1 teaspoon rum extract

Instructions

Add the eggs to a large mixing bowl and beat well. Add the coconut milk, cream cheese, sugar, rum extract, and salt. Whisk until everything is incorporated.

Cut the bread into 1-inch cubes. Add the bread to the egg mixture and stir until coated. Stir in the raisins.

Heat the over to 350ยบF. Let the French toast mixture sit while the oven heats.

In a second bowl, make the filling by mixing together the cream cheese, sugar, and rum extract.

Grease 9 muffin cups or line them with paper liners. Fill each cup halfway with the bread mixture. Add a teaspoon of the filling into each cup, then top with the remaining bread.

Bake for 20 minutes, or until puffy and golden brown.

Serve with maple syrup, if desired.
