Chicken Cordon Bleu with GO Veggie! Lactose Free Swiss Slices
- 2 boneless, skinless chicken breasts
- 2 slices thick-cut ham
- 6 GO Veggie! Lactose Free, Rice Swiss Slices
- ¼ cup gluten free panko style breadcrumbs
- 2 Tbsp. olive oil
- 1 teaspoon kosher salt
- Non stick vegetable oil spray as needed
Preheat oven to 375 degrees.
Carefully cut the chicken breast so that you can open it like a book from the side or ask your butcher to butterfly them for stuffing.
Lay the chicken breasts in front of you open, so you can stuff them. Place a slice of ham down on each and then 2 GO Veggie! Lactose Free, Rice Swiss Slices.
Roll or fold the chicken breasts up so the ham and slices are on the inside. Season with kosher salt on the outside.
With a brush, apply olive oil on the surface of the breast. Place the remaining slice on top of the oil washed breast. Brush the surface of the cheese with the oil wash again and then sprinkle breadcrumbs over the surface to cover the oil wash and chicken surface completely.
Spray the chicken with vegetable spray as needed and place on a baking sheet or pan. Place in the oven and cook until the middle is cooked through or registers 165 degrees on a thermometer. It’s ok if some of the slices come out from the middle.
Let rest for 8 minutes to allow the middle to set.
