Cheesy Cinnamon Cranberry Quinoa
- 1 cup quinoa
- 2 Tbsp. extra virgin olive oil
- 1 bag (8 oz) GO Veggie! Lactose Free Rice Mozzarella Shreds
- 1/4 tsp. sea salt
- 1/4 tsp. pepper
- 1/4 tsp. ground cinnamon
- 1/3 cup pumpkin seeds
- 1/4 cup dried cranberries
1. Cook quinoa according to package directions. Set aside.
In a large bowl, combine cooked quinoa with remaining ingredients; mix well to combine.
Serve warm or at room temperature.
