Preheat oven to 400°F. Cut French baguette into slices and brush each side with olive oil. Sprinkle with garlic salt and toast in oven for 6 to 8 minutes.
Mix chopped tomato, minced garlic, chopped basil and coat mixture with olive oil. Spoon mixture onto pre-baked bread and cover with Galaxy Nutritional Mozzarella Vegan Shreds. Bake in oven at 400°F until cheese melts for about 3-5 minutes.
