Broccoli Cheddar is one of my long-time favorite kinds of soup, and it’s definitely one of the most crowd-pleasing soups I know of. With a bowl full of Broccoli Cheddar Soup set in front of them, I’ve seen picky kiddos happily chomp on broccoli (it’s basically drowned in cheese sauce, right?), and I have yet to see an adult decline a bowl of it. You pretty much have to love a food that brings people together like that.
Here I take a classic favorite and give it a gluten-free and lactose-free twist. A lot of times when people order cheesy or creamy soups at their favorite restaurant (or buy them pre-made from the grocery store), they don’t realize that flour (or another source of grain or gluten) is used as the thickener. Instead, here I use GO VEGGIE Vegan Classic Plain Cream Cheese to thicken our soup, giving it a very creamy texture. I also melt GO VEGGIE Lactose Free Cheddar Shreds right into the broth for delicious cheddar flavor, and top each serving with just a sprinkling more for good measure. Both of these GO Veggie products are free of cholesterol, lactose, and gluten, so they’re perfect if you’re cooking for someone who is sensitive to these ingredients.
And I don’t skimp on flavor with this soup! Onion and garlic melt into the broth, creating a savory backdrop. A touch of Worcestershire sauce, Dijon mustard, and crushed red pepper flakes perk up everything else.
My best advice is to consider making a double batch so you’ll be ready with seconds when the kiddos ask for another helping!
